Cream left overnight with tea in the fridge whips up subtly perfumed, then meets lychees, peach and pink grapefruit under crushed meringue: Dammann Frères’ Bali Tea N°315, green and jasmine teas with a touch of rose, brings an air of the tropics.

Serves 4 · 20 min + overnight infusing

  1. Pour 1 cup (250 ml) of cold heavy cream into a jar with 2 tea bags (or 4 g of loose tea) of Bali Tea, cover and refrigerate overnight.
  2. Strain the cream, pressing the tea well, then whip it with 2 tbsp of powdered sugar to soft peaks.
  3. Gently fold in diced lychees, peach slices and pink grapefruit segments.
  4. Spoon into glasses and top with crushed meringues just before serving.
