Pressed with a thumb and filled with a drop of rose, twenty little cookies turn golden at the edges for teatime: Confiserie Florian’s Rose Petals Jelly, handcrafted in the Alpes-Maritimes, releases the powerful aroma of its petals.

Makes 20 · 35 min

  1. Heat the oven to 350°F (180°C) and beat 1/2 cup (115 g) soft butter with 1/3 cup (65 g) sugar and 1 egg yolk.
  2. Mix in 1 1/4 cups (160 g) flour and a pinch of salt, then roll the dough into 20 small balls.
  3. Place them on a lined baking sheet and press a hollow into the center of each with your thumb.
  4. Fill each hollow with 1/2 tsp of the rose petals jelly and bake for 12 to 14 minutes, until lightly golden at the edges.
  5. Let cool on the sheet before serving at teatime.
