The hazelnuts are lightly roasted before they ever reach the press, and their natural aromas deepen. Moulin de Maneyrol then presses them in the Dordogne, by first cold pressing, to make this artisanal virgin Hazelnut Oil, rich, nutty, and deeply fragrant, with the warm character of toasted hazelnut. Use it cold: in a vinaigrette for green beans or endive, drizzled over roasted vegetables, pasta, or grilled fish, or as a finishing touch on desserts.

Recipe idea

Roasted Squash with Hazelnut Oil

Serves 4 · 45 min

  1. Heat the oven to 400°F (200°C) and cut a butternut squash into wedges.
  2. Toss with a little neutral oil and salt, then roast for about 35 minutes, until tender.
  3. Off the heat, drizzle with 2 tbsp of hazelnut oil.
  4. Top with chopped toasted hazelnuts, crumbled goat cheese and a few thyme leaves.
