It takes an east wind for it to appear. Only then, in the historic salt marshes of Batz-sur-Mer, in Brittany, does Binet 1660 harvest this East Wind fleur de sel, so light a breath could scatter it, and airier than the West Wind cuvée. Hand-sorted and naturally aged, it strikes a delicate balance between power and lightness, the mark of an exceptional finishing salt. Add a few crystals just before serving, over scallops, sliced tomatoes, or a soft-boiled egg.

- Lower 4 room-temperature eggs into boiling water and cook for 4 minutes, for a runny yolk.
- Meanwhile, toast 2 slices of country bread, butter them generously and cut them into strips.
- Set the eggs in egg cups and slice off the tops.
- Sprinkle a few crystals of the East Wind fleur de sel into each yolk and dip in the toast soldiers.
